Peking Duck Explained

Grace Chu taught me how to make Peking Duck.   The first step was to obtain a duck that had a head and neck so that one could tie a string around the neck and hang it in an airy place to dry out.  This would later make for a crisp skin. It was a beautiful breezy summer day so I raised the sash on the kitchen window and hung the duck by his neck.  Four year old Chris stares at this display and says, “I know why it’s called Peking Duck!  He’s peeking at us!”
